    4 large baking potatoes
    4 slices bacon, cooked and crumbled
    6 cups lowfat milk
    1/2 cup all-purpose flour
    4 green onions, sliced
    5 ounces cheddar cheese, lowfat shredded
    1 teaspoon salt
    1/2 teaspoon black pepper
    8 ounces low fat sour cream


Either used leftover baked potatoes or pierce potatoes with a fork and place in the microwave on high for 10 minutes. Cook bacon in a dutch oven, crumble and set aside. In same pan combine milk and flour; blend well. Cook over medium heat about 15 minutes or until bubbly and thickened, stirring frequently. Remove from heat. Cut cooked potatoes in half and scoop out potato from skins; place in a bowl and mash with a hand masher. Add potatoes, bacon, 2 TBS of onions, 1 cup of cheese, salt and pepper, cook and stir until cheese is melted. Add sour cream; cook and stir until soup is heated.

Spoon soup into bowls, sprinkle with bacon, cheese and green onions.

Makes 7 1 1/2 servings.
