An old favorite, made a bit healthier with low fat ingredients. An old favorite, made a bit healthier with low fat ingredients.
Number of Servings: 6


    Yellow Sweet Corn, Frozen, 1 cup kernels
    Salsa, 1 cup
    Black beans, 1 can
    Chicken Breast, no skin, 24 ounces
    Fat free cream cheese, (4 oz)
    Cheddar Cheese, Low Fat, 1 cup, shredded


Put chicken in slow cooker. Mix beans, corn and salsa together and pour over chicken. Cover and cook on low for 4 hours or until chicken is tender. Remove chicken and shred. Put chicken back in slow cooker. Add cream cheeses and turn on high until melted. Top with cheddar. Good over rice, on tortillas, etc.
