Ingredients

    -Cooking spray
    -3/4 cups whole wheat flour
    -1/2 cup unsweetened cocoa
    -1/4 teaspoon salt
    -1/2 teaspoon baking powder
    -4 tablespoons unsalted butter (at room temp.)
    -2/3 cups sugar
    -1 large egg
    -2 egg whites
    1 teaspoon vanilla extract
    -2 tablespoons brewed strong coffee (at room temp.)
    -1/2 cup nonfat Greek yogurt
    -1/2 cup mini semisweet chocolate chips
    -1/4 cup chopped walnuts (optional)

Directions

-preheat oven to 350 degrees
-line 8-inch square baking pan with aluminum foil and spray with cooking spray
-whisk flour, cocoa, salt and baking powder together. set aside.
-cream butter and sugar at medium speed in an electric mixer 2-3 minutes (or until combined)
-add whole egg, 2 egg whites, vanilla extract and coffee.
-beat until incorporated
-scrape sides of bowl down and reduce to low speed
-slowly add flour mixture
-slowly add yogurt
-mix gently until just combined and thick
-stir in chocolate and chopped walnuts (optional)
-spread mixture evenly in pan with a spatula
bake for 20-25 minutes (or until a toothpick comes out clean from the center
-cool on a wire rack
-slice into 16 2-inch squares
