Ingredients

    * *Wheat flour, white, all-purpose, unenriched, 2 cup
    * Baking Powder, 2 tsp
    * Baking Soda, 0.5 tsp
    * Salt, 1 tsp
    * Nutmeg, ground, 0.5 tsp
    * Cinnamon, ground, 1 tsp
    * Egg, fresh, 2 large
    * Milk, nonfat, 0.5 cup
    * Granulated Sugar, 1 cup
    * Pumpkin, canned, without salt, 1 cup
    * *Smart Balance Buttery Spread, 4 tbsp
    * Walnuts, 0.5 cup, chopped

Directions

Sift flour, baking soda and powder, salt, nutmeg, and cinnamon into bowl. Combine eggs, milk, sugar, pumpkin and butter into a large bowl, and mix well. Fold in walnuts.

Turn into a greased loaf pan , and bake in a preheated 350 degree oven for about 35 mins until toothpick comes out clean. Remove from oven and let rest for 10 mins. Serves 12.
