Ingredients

    * Morning Star Meal Starters Chik'N Strips - 1 bag
    * Roasted Red Pepper & Artichoke Tapenade - 1/2 jar (about 9 tbsp)
    * Onions, raw, 1 medium
    * red bell pepper - medium - raw
    * Olive Oil, Extra Virgin, 2 tbsp
    * Garlic, 4 clove
    * Spinach, fresh, 2.5 cup
    * Diced Tomatoes w/ Jalepeno - 1 can
    * Artichoke Hearts in water - H.T. Traders, can 15 oz

Directions

Chop onion and red pepper. Saute onions, peppers and garlic in olive oil until onions are transparant. Add artichokes and frozen chik'n and cook on medium high for about 5 minutes. Add tapenade and cook another 3 minutes. Add diced tomatoes and spinach and cook for another 5 minutes or until spinach is cooked through.
