Ingredients

    4-6 cups vegetable broth (low sodium)
    4-6 cups water
    1 Portobello mushroom
    6-8 button mushrooms
    Handful of baby carrots
    4 small white potatoes
    2 cloves garlic
    italian seasoning
    bayleaf
    onion powder

Directions

Pour 4-6 cups vegetable broth in soup pot
Add water to give you a desired amount of liquid.

Chop the mushrooms, potatoes and carrots into chunks.

Add mushrooms, potaotes, carrots, crushed garlic, to the broth.

Add the following seasonings to taste:
Onion powder, italian seasoning, and one bayleaf.

Simmer until the veggies are soft.

Make a rouge from flour and broth. Add the rouge to the stew to thicken.

Enjoy with a crusty bread.
