    2 tbsp. Olive Oil
    2 cups Onion, chopped
    1 fresh chile or 1/4 tsp cayeanne
    1 1/2 tbsp. grated Ginger Root
    3 cups cabbage, chopped
    2 cups Chicken Broth or water
    3 cups Sweet potato, cubes
    2 cups fresh tomatoes, diced and undrained
    2. fresh or frozen sliced Okra
    3 tbsp. Lime Juice
    2 tbsp Cilantro, chooped
    chopped peanuts for garnish (optional) (did not calculate into recipe)


Saute onions, chile and ginger until onions are translusent. Add cabbage, sauteing until softened. Add water (I use stock - tastes richer) and sweet potatoes and bring to a boil. Cook intil potatoes are softened. Add tomatoes and okra and heat until okra is tender crisp. Salt to taste and take off heat. Add lime juice and cilantro. Serve over basmati rice and garnish as desired. (lime wedge, peanuts, cilantro)
Makes 10 1.5 cup servings
