Ingredients

    1 cup Brown Rice
    1/2 Red Onion Diced
    2 Portebello Mushroms Diced
    6 Frozen Spinach Balls
    2 tsp Garlic Powder
    1 oz Part Skim Mozza Cheese
    1 oz Feta Cheese

Directions

Saute Onions and Mushroms and Spinach in Garlic and small amount of olive oil add in to cooked Brown rice in baking dish top with Feta and Mozza Cheese Bake at 350 for 20 minutes or until bubbling.
