Introduction

Ingredients

    7 oz Cod fillet
    1 cup Low Sodium Chicken or Vegetable Broth
    1 cup canned pumpkin
    approx. 2 tsp red curry paste (use less, if you want a little less bite. You can always add.)
    3 cups fresh Spinach
    salt
    pepper
    optional: .5-1 T coconut oil (not in calculation)

Directions

In a skillet, heat pumpkin, curry paste, broth, and coconut oil (if using)
Heat over medium/high heat.
Stir until sooth and warm, about 10 minutes
Add spinach
Saute until well cooked and wilted
(Taste along the way to adjust the amount of curry paste)
Push yam mixture to the side

Season fish with salt and pepper on both side

Briefly saute until browned on one side, flip, cook until just cooked though. Do not overcook

Cover fish with pumpkin/spinach mixture and serve.

Technically 2 portions (3.5 oz of fish each) but, if I'm really hungry, I can eat the whole thing!
