    1 box Duncan Hines Moist Deluxe Spice Cake Mix
    1 15-oz can Libby's pumpkin
    3 large eggs
    1/3 c. olive oil
    1 tsp. ginger
    1/2 tsp. cloves
    1 tsp. cinnamon
    1 tsp. nutmeg


Mix cake mix as directed but substitute the pumpkin for the water and add the spices. Divide into cupcake cups. Bake at 350˚F for 18-20 min. or until a toothpick in the center comes out clean.
Makes 24 cupcakes

  • There's another recipe on here that only uses the spice cake mix and the can of pumpkin. It's much lower in fat/calories, and it tastes wonderful. Plus, it's super easy to make. - 11/27/08

  • It can't really have 52 g fat per serving, can it? You have the oil twice in the ingredients, I think that is the problem. - 10/23/08

    Sadly, yes it can. I made these for my cross country-running teenager and her friends. They run these off an much more with 2-3 miles of running, plus strides, plus 400 core exercises daily. I have a separate set of recipes for those with metabolisms far higher than mine.
