Introduction

Creamy ricotta and roasted red pepper sauce over bowtie pasta with leftover grilled chicken. Creamy ricotta and roasted red pepper sauce over bowtie pasta with leftover grilled chicken.

Ingredients

    3 oz grilled boneless, skinless chicken breast
    2 oz bowtie pasta
    1 small clove garlic
    1/3 c part skim ricotta
    1 T grated parmesan
    1 tsp parsley
    1 large red bell pepper
    1/3 c frozen peas

Directions

Place bell pepper directly on grill and roast, turning until blackened on all sides. Place in brown paper bag, close bag and wait until cool enough to handle. Remove skin, stem and seeds.
(May used jarred roasted red peppers). Place in bowl of food processor with garlic, parmesan, parsley and ricotta. Blend until smooth.
Cook pasta according to package directions. Place frozen peas in strainer and pour pasta over peas to drain. Put chopped, cooked chicken in pasta pan, add sauce from processor, fold in pasta and peas. Makes one generous serving.
