Introduction

I make this every morning, it takes just a few minutes and fills me up all morning! I make this every morning, it takes just a few minutes and fills me up all morning!
Number of Servings: 1

Ingredients

    30 grams baby bells mushrooms
    30 grams chopped onion (I prefer sweet)
    1/2 cup Egg Beaters
    1 whole wheat tortilla (I use La Banderita, different brands will slightly alter calorie count)
    1 oz feta cheese

    Cooking spray optional

Directions

I start by spraying the pan. You can choose to skip this step if you like.

Toss in the mushrooms and onions and let them cook until brown.

Add the Egg Beaters and combine the mushrooms, onions, and eggs so it's all mixed together.

While that is cooking, I like to zap the tortilla for about 15 seconds so it's nice and warm.

As soon as the eggs are cooked, put them in the tortilla, add the feta on top, wrap up, and enjoy!
