Introduction

Ingredients

    1 lb ground beef
    1 onion, chopped
    2 (14.5 oz) cans diced tomatoes with green chilies
    2 (14.5 oz) cans pinto beans (drained)
    1 (14.5 oz) can black beans (drained)
    1 (14.5 oz) can cream-style corn
    1 package ranch style dressing mix
    1 package taco seasoning
    1 cup water (or broth) optional

Directions

Brown beef with onions in a medium soup pot. Drain excess grease. Add remaining ingredients, stir and simmer for 20 minutes. If it seems a little thick you can add some beef broth or water.

This is great with cilantro and a dab of sour cream!

    If my calculations are right you can save about 60 calories and 5 or so grams of fat by using 99% Lean Ground Turkey. I made it that way and it's fantastic! - 1/14/09

    Sooo good. I added 1/4 cup of water to it & after it was done I put fat free sour cream in & it was delicious. I make something from this site called "chicken taco stew" in the crockpot. They mostly only differ with chickn & beef... but they both are great! - 1/19/10

    I made this tonight and not only was it easy it tastes great. I used the fiesta ranch and was able to leave out the taco seasoning to cut down on the sodium. I will make this instead of my regular chili recipe that takes all day! - 2/6/10

    I made this over the weekend and it was delicious! I have been eating the leftovers all week. The only changes I made were to add 3 cloves garlic and cannellini beans. It had a very rich flavor. I've been eating it as soup and also over some baked tortilla chips. This is a definite keeper! - 5/19/10

    This was yummy, I just used some left over taco meat I had in the fridge...I happen to have two container-lol. So I obviously didn't have to cook the meat it was already cooked. So I just thew all the ingredience in and plus added a chopped up can of black olives. YUM! - 1/27/10

    I use to make this when I went to WW, loved it then and still do. I have made it with ground turkey and extra lean ground beef - good either way. Love the avocado idea. Got all the ingredients going into the crock pot in the morning for a wonderful supper tomorrow night. - 1/3/10

    This recipe gets 5 stars for taste and preparation. It is SO easy and SO good. Made it for the first time in a crockpot and took it to a pot luck and it was a hit.     I loved this recipe! It was something my husband came home from running errands and said.... wow what are you making. it smells good." and what made it even better is that he didnt put BBQ sauce on it! My 4 year old ate it just fine but my 3 year old put up a fight. Overall it was a HIT! - 3/6/09

    Sounds fantastic. I'm going to make it for dinner tonight leaving out the ranch and using pace salsa and hominy instead of the caned tomatoes and cream corn because thats what I have on hand. - 3/6/09

    Made this 3 times. It is truly awesome. I do not like black beans, but substituted a med can bush honey beans. Also could not find sodium free tomatoes with green chilis, so added 1 can chopped green chilies and some serrano peppers. (I like Spice) - 4/14/18

    Fantastic! I'm a vegetarian so I left out the meat altogether. I also can't get creamed corn or canned tomatoes w/chilis where I live so I used regular canned corn and added about 3/4 cup sour cream, and diced two large tomatoes. I added more water to make it more soupy and absolutely loved it! - 1/17/09

    We do it with Gardein meatless crumbles and it is delicious. I do brown the onions and green pepper (use that instead of the Rotel) in a little olive oil and then add low salt diced tomatoes. One of our favorites and so easy! Add meatless crumbles at the end. - 5/10/21

    Sounds good. Would like to make it but hopefully could hold that sodium count down by getting the canned beans and tomatoes in a low or no sodium format.
