Ingredients

    12oz penne pasta
    2T extra virgin olive oil
    1 clove garlic, minced
    1/2c. sun-dried tomatoes, chopped and drained
    2T of fresh parsley, chopped
    1T of fresh basil, chopped
    5oz baby spinach
    4oz crumbled feta cheese
    1/2c. kalamata olives

Directions

**You can add more spinach if you'd like. I reduced the amount due to the fact that my family doesn't care much for it.
***If kalamata olives are too pricey, you can buy black pitted olives and soak them in red-wine vinegar before cooking.

1. Prepare the pasta according to the box directions. (I like to add a dash of salt and olive oil)

2. Drain the pasta.

3. In the same pot, heat the oil. Add the garlic and soute, for about 2 minutes. Add the tomatoes, parsley, and basil, and cook stirring occasionally, for about 2 minutes. Add the pasta, spinach, cheese, and olives.
