    6 tbsp butter
    1 cup water
    1/2 tsp salt, pepper and paprika
    1 cup flour
    3 large eggs
    4 oz cheese
    milk - to brush tops only


Boil water, butter and spices. Remove from heat. Add flour all at once and mix quickly until it forms a ball in the saucepan.

Add eggs one at a time. Mixture will be slightly wet and glossy. Stir in cheese. Put back on heat for about 1 minute to dry mixture a touch.

Put mixture into a piping bag to form 1" mounds on a greased cookie sheet (pam works fine but you must line with SOMETHING or they WILL stick). If you don't have a piping bag you can use a spoon but it's slower and you don't want the mixture to cool too much or it may become gluey.
If your tops have 'tails' on them, wet your finger and run over the tops to smooth them out.

Bake at 375F for 25 to 35 minutes - until golden brown and very light to pick up.

Poke the side of each one with a toothpick to vent the steam so they don't become soggy.

Makes about 50.
