Ingredients

1 large onion sliced
2 medium potatoes, peeled & sliced
1 lb. extra lean ground beef
1/2 cup brown rice
1 cup chopped celery
salt and pepper
10 oz. tomato soup
Can boiling water
Directions
Place sliced onions over bottom of 2 quart casserole. Sprinkle with salt & pepper. Place potatoes over onions & salt and pepper. Pat ground beef over & sprinkle with salt & pepper. Sprinkle rice on next, followed by celery. Sprinkle with salt and pepper.
Mix soup & water together. Pour over top. Bake covered in 350 F oven for 2 hours until vegetables are tender. Serves 4.
