Ingredients

    4 boneless, skinless chicken breasts
    1 cup fat free ricotta
    1 cup part skim mozzarella cheese
    1 tbsp basil
    1 tbsp oregano
    1 tbsp parsley
    1tsp rosemary
    1 tsp garlic
    1/2 can diced tomatoes

Directions

Preheat oven to 350 degrees. Spray a baking dish with non stick spray. Trim excess fat from chicken and make a pocket through the thickest part of the chicken. Mix ricotta, mozzarella, and spices in a bowl. Stuff each breast with cheese mixture and place in baking dish. Sprinkle chicken with salt and cover with aluminum foil. Bake for 30 min. Remove foil, top with diced tomato and cook for 10-15 more min. Serve.
