Introduction

Number of Servings: 18

Ingredients

    1.5 cup ground flaxseed
    1.5 cups Kamut flour
    1 C Brown sugar
    2 tsp baking powder
    2 tsp baking soda
    1/2 tsp salt
    2 TBS cinnamon
    1.5 c grated carrots
    3 apples grated
    1/2 c raisins or other dried fruit (optional)
    3/4 c soy milk
    2 eggs
    1 tsp vanilla

Directions

Mix Dry ingredients
Add other items 1 by 1 until well mixed.
Fill muffin cups 3/4 full
Bake 40 - 45 minutes at 350F.
