    # Butter, unsalted, 1 tbsp (remove)
    # Peppermint, fresh, 6 tbsp (remove)
    # Grapefruit, fresh, pink and red, California and Arizona, 1 fruit (3-3/4" dia) (remove)
    # Lime Juice, 1 fl oz (remove)
    # Ginger Root, 3 tsp (remove)
    # Rum, 0.33 fl oz (remove)
    # Granulated Sugar, 1 tsp (remove)
    # Vanilla Bean, 1 serving (remove)
    # Pineapple, fresh, 300 grams (remove)


Peel and section grapefruit over a bowl, reserving juice. Mix diced fruits and grinned ginger; gently toss. Set aside.

On a small pan combine butter, vanilla beans seeds, lime juice and sugar, melt and steer on medium high-heat. Add fruits and cook for 4 min. while gently tossing.

Remove from heat; pour rum into one side of pan. Ignite rum with a long match; let flames die down.

Add mint and chill if serving on tart, else serve immediately.
