Introduction

I tweaked my banana muffins to try and make them a little less heavy than other recipes I have tried. This is what I came up with. I tweaked my banana muffins to try and make them a little less heavy than other recipes I have tried. This is what I came up with.
Number of Servings: 12

Ingredients

    2 very ripe bananas
    1/2 cup brown sugar
    1 egg
    1 teaspoon vanilla
    1/2 cup apple sauce
    1 cup flour
    1 tablespoon baking powder
    2/3 cup oats

Directions

Preheat oven to 350 degrees. Mash bananas. Mix in brown sugar. Add egg, vanilla and apple sauce and mix. Add flour and baking powder and mix well. Stir in oats. Pour batter into muffin pans, about 3/4 full. Bake for 25-30 minutes. Insert a toothpick to make sure it comes out clean, to make sure they are done. Makes 12-14 cupcake-sized muffins.
