Ingredients

    3 grilled chicken breasts
    4 celery stalks
    4 bib lettuce torn
    2 cups of mangos
    50 grams of walnut halves
    4 scallions thinly sliced
    3 tbsp of mayonnaise
    1 tbsp of lime juice
    1 tsp of dijon mustard
    3 tbsp of olive oil

Directions

serves 4

-Cut the chicken into bite-sized pieces and diagonally slice the celery.
-Arrange the lettuce on serving plates and top with the chicken and celery.
-Slice the mangoes into bite-sized pieces, then add to the plates with the walnuts and half the spring onion.
-Mix together the mayonnaise, lime juice, mustard and oil and drizzle over the salad.
-Serve sprinkled with the extra spring onion.
