Ingredients

    Hursts HamBeans 15 Bean Soup, 8 cup
    olive oil, 1 tsp
    Onions, raw, 1.5 cup, chopped
    Green Peppers (bell peppers), 0.5 cup, chopped
    Garlic, 1 clove
    Chili powder, 2 tsp
    Lea & Perrins, Worcestershire Sauce
    *Hillshire Farm Turkey Smoked Sausage, 16 oz
    Baby Carrots, raw, 12 medium
    salt and pepper to taste

Directions

In a large pot, soak beans with 2 quarts of water overnight (at least 8 hours). After soaking, drain water, add a fresh 2 quarts of water and salt and pepper to taste. Bring beans to a boil and then simmer uncovered for 2 1/2 hours. Saute onion, garlic, and pepper in the 1 tsp of oil. Add to beans and simmer for another 30 minutes. I usually add another cup of water at this point. Slice the turkey sausage into 8 equal pieces and then slice each piece into 8 slices (one soup serving of sausage now equals 8 slices). Add sausage and worcestershire sauce to the soup and simmer another 30 minutes. Makes 8 2-cup servings (with 8 slices of sausage in each serving).
