Introduction

A "water" soup. This is the soup that taught me that I don't have to use stock or bullion for a flavorful soup.

There is something about the kale/potato flavor that stands alone just fine.

You may drizzle with balsamic vinegar and olive oil if you like that's in addition to the fresh ground black pepper

Number of Servings: 6

Ingredients

    2 qts water (I use filtered tap water)

    2 large bunches of kale with tough stems removed chopped or chiffinaded as coarse or fine as you prefer.

    A pound of potatoes half slices or dice to match size of pieces of kale

    1 tsp salt

Directions

Put water in 1 gal pot and bring to boil.
Add salt. Lower heat to low
Then kale, put on lid until kale is wilted.
Add potatoes and simmer until kale and potatoes are tender.
Garnish in bowls with fresh ground black pepper.
May be served hot or room temp
May also garnish with olive oil and/or balsamic vinager and/or hard boiled egg.
