    2 cups sugar
    3 cups flour
    1 tsp. salt
    1 tsp. cinnamon
    1 tsp. baking soda
    1/2 TB baking powder
    2 eggs
    2 tsp. vanilla
    1 cup applesauce, unsweetened
    2 TB vegetable oil
    2 cups shredded zucchini


Make 2 loaves (24 slices or 48 half slices)
Preheat oven to 350. Spray loaf pans with Pam and lightly flour. Mix together sugar, flour, salt, cinnamon, soda and baking powder. Add remaining ingredients. Bake about 60. Check it after 40 minutes.
