    2 cups dry oatmeal
    2 cups low fat buttermilk
    1/2 cup egg substitute
    2 tablespoons olive oil
    1/2 cup flour
    2 tablespoons sugar
    1 teaspoon baking powder
    1 teaspoon baking soda
    1/2 teaspoon salt


Start night before. Combine oatmeal and buttermilk. Stir well. Cover with plastic wrap and refrigerate overnight.
In the morning, add rest of ingredients. Beat with wire whisk until combined.
Spray griddle with cooking spray. Use 1/4 cup batter per pancake.

  • These are very good! And very healthy. I used 3 whole eggs instead of egg substitute and they were fine. I also used Kefir instead of buttermilk. I like the fact the batter is soaked overnight, as it helps aid in digestion and makes the nutrients more absorbable. - 4/20/07
