    2 ripe bananas, mashed
    1/4 cup canola oil
    2 cups unsweetened applesauce
    1 cup buttermilk ( may substitute one tbsp lemon juice or vinegar in a one-cup measure plus low fat milk to fill to one cup mark.)
    2 eggs, beaten,
    3 cups bran buds cereal
    1 cup raisins
    1/2 cup chopped walnuts
    1 tbsp molasses (approx.)
    1 apple, chopped finely
    1/3 cup Splenda brown sugar blend
    1 cup whole wheat flour
    1 cup all-purpose flour
    1 tsp. salt
    5 tsp baking powder


Mash bananas in large bowl, add beaten eggs, applesauce,buttermilk, bran buds, Splenda, molasses,walnuts, raisins and chopped walnuts. Let bran mixture sit for 30 minutes.

While this mixture is sitting, preheat your oven to 350 degrees.

Combine flours, salt & baking powder in small bowl. After the bran mixture has sat for 30 minutes, add flour mixture and stir until flour mixture is just combined into wet mixture.

Bake in non-stick muffin tins sprayed with non-stick spray for 25-27 minutes. Test with toothpick for doneness. Makes 24 regular sized muffins.
