This is very tasty. My son absolutely loves it! This is very tasty. My son absolutely loves it!
Number of Servings: 4


    Chicken Breast, no skin, 12 ounces ( i use the frozen raw tenders in the bag)
    Beans, black, 1.5 cup
    Rotel Tomatoes 1 cup
    Black Bean & Corn Salsa, 6 Tbsp
    Chicken Broth, 1/2 cup
    *Philadelphia Fat Free Cream Cheese, 3 oz
    *Tostitos, scoops, tortilla chips, 4 oz (can use baked ones and lower nutritional calorie and fat content)


1. Brown chicken in skillet (can use spray olive oil or whatever you like) Then add broth.
2. Add salsa, cream cheese, black beans, and rotel. turn heat to medium and cover - stirring occassionally. Simmer approx. 20 minutes to allow flavors to completely combine and cheese to make a queso type dip.
3. Serve with tortilla chips. Can sprinkle shredded monterrey jack cheese on top (this is not included in nutritional values listed here and is optional - but very good!)
