Introduction
I got this recipe from Topsecretrecipes.com and it's supposed to be Cracker Barrel's Macroni & Cheese, not sure about that, but it sure is good! Not what you'd call low fat though. I added this for my own tracking, and I thought I'd share it. Ingredients

1 8oz bag Fiber Gourmet Light Pasta (or other macaroni noodles)
3 tbsp Smart Balance Light
3 tbsp Flour
2 1/4 cups skim milk
1/2 tsp salt
1/8 tsp black pepper
2.5 cups shredded Colby Cheese
Directions
Preheat oven to broil.
Cook pasta in about 4 cups of boiling water for about 8 minutes, or until tender, then drain.
Melt butter in 10" oven safe skillet over medium heat. Whisk in flour and continue whisking until bubbly, add milk, salt, and black pepper and stir until the milk begins to bubble. Add Cheese, and then turn off heat, whisk sauce until cheese is melted and the sauce is smooth.
Stir in cooked macaroni noodles, and put the whole thing in the preheated oven for 2-3 minutes until several browned spots appear on the surface. Remove from oven and let sit for 5 minutes before serving. Sauce will thicken as it sits.
Makes 6 servings.
