    3 c unprocessed wheat bran
    1c. boiling water
    1 c. maple syrup
    0.5 c canola oil
    2.5 c white wheat flour
    2 t. baking soda
    1 t. salt
    2 egg whites
    2 c. buttermilk


Makes 24 muffins

Mix 1 c. wheat bran with 1 c. boiling water; stir and let water absorb into bran. In a separate bowl, blend maple syrup and oil. Measure and combine flour, baking soda and salt. Combine the moist bran with egg whites, the remaining 2 c. of bran, buttermilk, maple/ oil mixture, and flour, soda and salt mixture. Stir til well blended.

Place in refrigerator for future use, or bake at once.

When preparing to bake, preheat oven to 400 degrees. Stir batter well.

Optional: Fill muffin cup 1/4 full, put a teaspoon of jelly / jam on the batter, add more batter to cover the jelly and fill the muffin cup 1/2 full.

Alternatively, you may add 6-8 blueberries instead of the jelly. Adding both is delicious!

Bake 15 minutes at 400 degrees. Keep remaining mixture refrigerated in airtight container for 2-4 weeks.
