Introduction

Ingredients

    2 pkgs boneless, skinless chicken breasts (approx 6-7 breasts) pounded 1/2" flat

    Filling:
    1 medium onion, chopped
    4 cloves garlic, minced
    2 tbsp Hormel's Bacon Bits
    1 cup Sargento's Light Ricotta Cheese
    1 large egg, beaten
    1 10 oz pkg frozen chopped spinach, thawed and well drained (squeeze out over strainer)
    1/4 tsp pepper
    1/2 tsp garlic salt

    8 oz pkg of sliced mushrooms
    1/2 can Campbell's Condensed Chicken Broth

Directions

Pound each breast to 1/2" thickness, set aside.

Saute onion and garlic over medium heat in spray oil. Let cool. Mix egg, spinach, ricotta, bacon, pepper, salt and sauteed onion and garlic. Spread mixture in center of each breast, roll up, fix with toothpick and place in 9x13" pan.

Saute 8 oz pkg of sliced mushrooms in same frying pan used for onion and garlic, pour sauteed mushrooms over chicken breasts. Add 1/2 can condensed chicken broth over breasts, cover with foil.

Bake 1/2 hour, covered, at 425. Great with parmesan couscous. (couscous not included in calorie count)
