    4 Skinless, boneless chicken breast
    1 cup chopped celery
    1 cup chopped carrots
    1 cup long grain brown rice (uncooked)
    2 cups water


Combine celery, carrots rice and water in a baking dish. Bake at 400 for 20 minutes uncovered. Add chicken breasts and cover with soup. Bake an additional 20 minutes or until chicken is done. Remove from over, let stand for 2 - 3 minutes. Makes 4 servings.

    "Soup" is not listed in the ingredients so I didn't add any, and the rice turned out HARD. I still have it in the fridge as no one wants to eat it. :( - 12/10/08
