Ingredients

4 lean loin pork chops
1 Tablespoon olive oil or less
1 medium onion, sliced
1 medium red bell pepper, sliced
1 can diced Italian tomatoes with seasonings
1 12 oz. package whole wheat spaghetti
Directions
Spray non-stick skillet. Add just a drizzle of olive oil as skillet heats for taste.
Slice 1 onion and 1 red bell pepper. Cook slightly in olive oil until onion begins to look clear. Set aside.
Brown pork chops on both sides.
Place onions and bell pepper on top of pork chops.
Add one can diced Italian tomatoes.
Bring to simmer, cover and cook until chops are done. On regular cut chops, I cook about 20-25 minutes since they've been browned already.
Prepare wheat noodles according to package directions during the last 15 minutes of cooking time for the meat. Place 1/2 cup of noodles on each plate. Serve pork chops and tomato sauce mixture over the noodles. Serve with a nice mixed salad or green vegetable.
You can sprinkle with Parmesan or Romano cheese, but be sure to add the calories to your total.
Serve with a mixed vegetable salad or green vegetable.
