This delicious mexican soup can be made in 30 minutes! This delicious mexican soup can be made in 30 minutes!
Number of Servings: 6


    1 lb extra lean ground beef,
    1 c. fresh chopped onion
    4 tsp minced garlic
    1 can diced tomatoes
    2 cans black beans
    1 potato, peeled and diced
    1/2 head cabbage, sliced
    2 c. water
    4 c. low spdium tomato juice
    1/2 cup chopped fresh cilantro
    1 Tb. Cumin
    Juice of 2 limes
    1 tsp hot pepper sauce or to taste


Spray skillet with cooking spray. Brown ground beef and rinse and drain. Simmer onions and garlic and add to beef. Transfer to a large pot. Add all of the ingredients and bring to a boil on medium heat. Simmer for 20 minutes, or until diced potatoes are soft. Garnish with non fat sour cream(2 tbp is 20 calories, 1/8 cmexican shredded cheese(50 cal) and 2 sliced black olives-if desired.
