    1 pound Ground beef, lean,
    1 Cup Chopped Onions
    1 Cup Sliced Mushrooms, fresh
    1 Cup Chopped Spinach, fresh,
    1 Cup Milk, 1%,
    1 cup Cheddar Cheese cubed
    1 13.25 oz box Barilla Whole Grain Penne
    Salt & pepper to taste
    2 tsp dry mustard


Cook Penne according to package driections.

In a Dutch Oven or heavy pan, brown ground beef, drain. Then add onions and mushrooms and cook together until onions are translucent. Add dry mustard, salt, pepper, cheese, and milk reducing heat to medium. After the cheese is melted, fold in spinach and penne.

Place Dutch Oven in a preheated oven at 350 F for 30 minutes or until cheese is bubbly and lightly browned.

(If not using a Dutch Oven place mixture in a 13"x9" baking dish that has been sprayed with cooking spray. )

  • I feel like the casserole needed a little more flavor. I omitted the mayo and used colby cheese. I also thought there were too many noodles in the casserole. If I make this again, I will use additional seasoning in the ground beef and greatly reduce the amount of noodles. - 3/11/12

    Mayo? Do you mean milk? I do change up spices and herbs depending on my mood. Yeah, it can have too much pasta for some. Hubby really likes it though and I usually just put a little less pasta on my plate. Thanks for checking it out.
