Introduction

Number of Servings: 8

Ingredients

    8 eggs
    3/4 cup half-n-half
    1 cup low fat cheddar cheese shredded
    1 cup cooked thin spaghetti or angel hair pasta
    1 cup cooked, chopped broccoli
    salt and papper to taste

Directions

Mix all ingredients except the pasta, whip till just thick but not too frothy or it will be too soft.
Pour into a well-seasoned 10-inch cast iron skillet coated with a little olive oil
drizzle pasta over, spreading out evenly
Cook in preheated 350 degree oven for 50 minutes or so until center is set.
If you get a dark brown crust on the bottom it's probably because your skillet was not well-seasoned and it tastes better if you just cut the crust off,
Let cool about 10 minutes before slicing.
