Ingredients

    5 green peppers
    1 lb. ground turkey
    1 small onion
    3/4 cup minute rice
    1 can tomato soup
    1 small can tomato sauce
    3/4 cup water
    2 cups mozzarella cheese

Directions

1) Cut the tops off peppers and scoop out insides. Put 4 peppers in pot of cold water and allow to boil for 10 minutes. Remove and put in 9x13 baking pan.

2) Meanwhile, chop onion and remaining green pepper. Mix togehter the ground turkey, green pepper, onion, rice, tomato soup, tomato sauce, and water.

3) Save 1/2 stuffing for insides. 1/2 for topping. Stuff peppers allowing room for expansion. Place peppers in an ungreased baking dish and cover with the remaining mixture. Bake at 350F for one hour. About last 15 minutes or so, sprinkle with mozzarella cheese.
