Introduction

Great with just a side of asparagus! Great with just a side of asparagus!
Number of Servings: 2

Ingredients

    2 salmon filets, 6 ounces each
    2 tbsp extra virgin olive oil
    1/8 cup nicoise olives
    1 tsp chille powder
    2 cloves garlic, finely chopped
    1 tsp Dijon mustard
    1 tbsp honey

Directions

Combine all ingredients in a blender and blend until smooth. Season with salt and pepper to taste. Place salmon in a small baking dish and pour vinagrette over. Marinate overnight or a minimum of 15 minutes. Preheat grill or grill pan over high heat. Remove salmon from marinade and season with salt and pepper to taste and grill for 3-6 minutes on each side, brush with the reserved vinaigrette every 2 minutes.
