Simple super easy enchilada's. Simple super easy enchilada's.
Number of Servings: 8


    2 cups Monterey Jack cheese
    1 can of sliced olives
    1 medium onion, chopped
    1 package of 24 corn tortillas
    1 16 oz. can of Macayo enchilada sauce (if you can find it, if not use what you like)
    Garnish with tomatoes, lettuce & low fat sour cream.


Preheat oven to 350; In a large bowl mix chopped onions, olives and cheese. Add some salt and pepper. After you have mixed that well. I layer the corn tortillas on the bottom of a 13x9 pan then put a layer of the cheese mix and add the enchilada sauce. Keep doing that until your done with all ingredients. Place pan in the oven for 45 minutes.
