    1 tsp. Olive Oil
    1 medium onion, chopped
    2 garlic cloves, chopped
    1 lb. ground turkey breast
    3 cups low sodium
    1.5 cups brown rice
    1 cup canned stewed tomatoes, undrained
    1 can (3 servings) beans in chili sauce
    4 oz. 2% Velveeta, cubed
    2 tsp Chipotle Tabasco sauce, more or less to taste


Prepare rice per the package directions using a very low sodium vegetable broth.

Meanwhile, heat oil over medium heat in a large skillet. Add the chopped onions and garlic. Saute until soft . Add the ground turkey breaking the meat apart as it cooks. Fry until no longer pink, add it the canned beans, tomatoes, and Tabasco sauce. Cover and heat until mixture comes to a boil. Reduce heat to low and simmer until mixture begins to thicken. Add the cooked rice to the meat mixture the stir in the Velveeta cubes. Remove skillet from heat and cover until cheese melts. Makes 6 - 1 cup servings.
