Ingredients

    1 c Whole Wheat Flour
    1/4 c Rolled Oats
    1 c Canned Pumpkin
    1/3 c Motts Organic Unsweetened Applesauce
    1/3 c Better'n Eggs liquid Egg Substitute
    1/3 c Packed Brown Sugar
    1/3 c Sugar in the Raw
    .5 cup chopped Walnuts
    1 very ripe banana, mashed
    .5 cup vanilla protein powder
    .5 tsp Baking Soda
    1 tsp Baking Powder
    1 tsp Ground Cinnamon
    1/3 tsp Ground Ginger
    1/3 tsp ground Nutmeg,
    1/3 tsp Ground Cloves
    Dash of Salt

Directions

-preheat oven to 350
-line muffin tins
-combine flour, oats, baking powder, spices, baking soda and salt in a large bowl.
-whisk until well mixed.
-combine remaining ingredients (except nuts) in a large mixing bowl; beat until smooth.
-gradually beat in flour mixture until just combined
-fold in nuts
-spoon into tins
-bake 20 - 25 mins
-cool on wire rack

Makes 16 medium muffins or 3 dozen mini muffins. Enjoy!
