Ingredients

    6 oz. frozen, cooked, shelled and cleaned shrimp, about 9 large pieces
    1 cup finely chopped celery The leaves are especially tasty.
    1/4 cup finely chopped fresh red pepper A green one would also be fine.
    1 cup very finely shredded cabbage
    1 Tbsp mayonnaise
    1 Tbsp rice vinegar
    1 Tbsp freshly squeezed lemon juice
    1/4 tsp celery seed
    salt and pepper to taste

Directions

Defrost shrimp by running under cold water in colander for about 5 minutes. When thawed chop shrimp into small/medium pieces. In a medium size bowl combine all the ingredients. Season with salt and pepper and serve immediately.
