    2 Cups Zucchini - Sliced
    2 Cups Stewed Tomatoes or Tomato Sauce
    1 Clove Garlic - Minced
    1 Cup Shredded Low Fat Cheddar or Colby Cheese
    Salt and Pepper (or seasoning salt) to taste


In medium skillet brown 1 clove minced garlic
(garlic can also be omitted) and 2 cups sliced zucchini

Add 2 cups stewed tomatoes (or tomato sauce) and salt and pepper, or seasoning salt (to taste)

Bring to a simmer on low-med heat for 20 mins (or until zucchini is tender)

Top with 1 cup shredded cheese (reduced fat cheddar or colby)

Divide into four servings and enjoy!
