    3 oz pine nuts, divided into two equal piles
    zest and juice of one lemon
    1 cup parsley, finely chopped (about 1/2 large bunch)
    6 tbsp extra virgin olive oil
    4 oz freshly grated Parmesan cheese
    1.5 oz freshley grated mozzerella or pecorino cheese
    16 oz pasta (linguini or fettucini)
    salt and pepper to taste


Serves 8

Boil pasta till done.

Meanwhile, smash half the pine nuts into a paste in medium bowl. Add remaining nuts, lemon juice and zest, parsley, and olive oil. Stir, then add the cheeses. Toss with cooked pasta.

(If sauce is too thick, add some of the pasta water.)
