Number of Servings: 6

Ingredients

    1 T Olive oil
    1/2 C Diced celery
    1/2 C minced onion
    1/4 C chopped green bell pepper
    3 T chopped carrot
    1 T minced Garlic
    1-1/2 t ground cumin
    1 t dried oregano
    1 t chili powder
    1/4 t black pepper
    2 C broth (vegetable or chicken)
    1 C Water
    3 15 oz cans black beans drained and rinsed - OR - 1 lb dried black beans prepared according to package directions.

Directions

1. Heat oil in large saucepan. Saute celery, onion, bell pepper and carrot 10 min.
2. Add garlic and next 4 ingredients. Saute 3 minutes.
3. Add broth, water, and beans. Bring to boil. Reduce heat and simmer for 15 minutes.

4. Blend soup to pure. Garnish with green onions and/or sour cream and/or cilantro. (garnishes not included in nutritional information)
