A delicious way to roast a chicken! A delicious way to roast a chicken!
Number of Servings: 4


    1 roasting chicken
    3 tbsp olive oil
    5 cloves garlic, peeled
    1 lemon, peeled
    5 or 6 sprigs fresh thyme
    salt and pepper
    2 onions, peeled and quartered
    4 carrots, peeled and cut into halves


Place your defrosted chicken in a roasting pan and rub all over with salt and pepper. Place the peeled lemon inside the cavity and 2 cloves of garlic. Add a few sprigs of thyme. Lift the skin from the body and push the remaining cloves of garlic (halved) under it.
Place sprigs of thyme beside the drumsticks, wings, under the skin and in the roasting pan. Arrange the carrots and onions around it in the pan and drizzle with the olive oil. Roast at 220°C for 1-11/2 hours. Check periodically and spoon juices over the bird. Enjoy!
