Number of Servings: 6

Ingredients

    Olive Oil, 1 tbsp
    Onions, raw, 1 cup, chopped
    Garlic, 3 clove ,minced
    Chicken Broth 99% Fat Free, 1 can
    Water, 2 cups
    Lentils, brown,1 cup
    Brown Rice, 1 cup
    Curry powder, 1 tsp
    Cumin powder, 2 tsp
    Hot Chili Peppers,dried- 3 whole
    kosher Salt, to taste
    ground black pepper to taste

Directions

over medium heat in a medium saucepan heat oil. Saute onion till softened, about 3 minutes, add agarlic,chili peppers, and other spices then saute until fragrant, about 1 minute.Stir in rice and lentils.Add broth and water. bring to a boil then reduce heat to a simmer.Cover and cook for 45 minutes. remove chili peppers. season with salt and pepper and serve

    Had a very good flavor and was excellent as a side dish. I might try and up the spice to more nostril-searing levels next time, though. - 1/7/09

    I make a recipe almost identical to this (minus the chilis) and we all really love it. It's hearty, filling, and very healthy. It easily feeds my family of 4 as the main dish with some left over for the next day's lunch. Try it, you'll like it! - 11/4/08
