Chicken Enchiladas-

Number of Servings: 12


    Flour, white, .25 cup
    Water, tap, 2.50 cup (8 fl oz)
    Coriander leaf, dried ground, 1 tsp
    Green Salsa Verde, Mild, 1/2 cup

    Joseph’s Lavish Roll-Ups, 12 serving
    (high fiber, low-carb roll ups)
    Chicken Breast, no skin, 16 ounces


Put water in medium pot, add in chicken and spices. Boil , then let simmer till chicken is tender (abut 30 min) (Save aside the liquid from pot).

When you can you can pull the chicken apart easily into shreds it's done.

Remove chicken - cool then pull apart into those shreds and place in another larger bowl. Add in the Green Salsa Verde'. Mix well mashing it into the chicken to make filing for rolls.

Melt butter in the pot and put in the flour making a rue'. Slowly whisk in the remaining chicken stock liquid. Heat till it thickens. Remove from heat. Set aside.

The Lavish Roll-ups are two servings each so cut each one in half. You should have 6 roll ups cut into 12 pieces. In each one should have 1.33 ounces of Chicken mixture in it. (1 oz 1/3) Roll up and place in a long casserole pan. Large enough to contain 12 rolls. After you finish the last roll, pour the sauce over the top of them.

Nuke in the microwave until bubbly all over. Usually about 5 minutes sometimes 8. Depends on how tight you have them packed in.

This makes 12 servings and has 120 calories each.

You can top with Cheese but that's extra calories which I omitted.
