Number of Servings: 4


    1 (10 oz) pkg frozen spinach
    1 cup chopped onion (frozen is fine)
    2 tsp bottled minced garlic
    2 cups water
    2 cans (14.5 oz each) fat free chicken broth (vegetable broth works)
    1 can (14 oz) petite diced tomatoes
    1 tsp sugar
    1 pkg (20 oz) tortellini (any flavor it fine, I use cheese)
    1/4 tsp black pepper


Remove spinach from its package and place on microwave-safe dish. Microwave on high for 5 minutes to defrost.
Meanwhile, add onion and garlic to pot and cook for 1 minute or until the onion is tender.
Add the water and broth to the pot and bring to a boil. Add spinach, tomatoes, pepper and sugar to pot. Stir to mix well.
Add the tortellini and bring pot back to a boil. Cook for 7-9 minutes.

Makes 4 generous servings (20-22 oz each)
