    1 lb bag of pinto beans, soaked overnight
    1-2 smoked turkey legs-depending on size
    --want about 12-16 oz total.
    1 lg. onion, chopped
    3 stalks celery, chopped
    4-5 carrots, chopped
    3-4 Tbs garlic
    2-3 Tbs ginger-garlic paste
    1 Tbs each
    turmeric, soy sauce, chili powder,
    1 tsp each
    rosemary, red pepper flakes, celery seed,
    1/2 tsp cloves, ground
    1/2 tsp cayenne
    2 Tbs red wine vinegar
    1-2 Tbs soy sauce
    5 cups water (to just cover)


This makes 19 half cup servings.

Remove the turkey leg after cooking, shred and add it to the beans, leave some beans without meat if you plan to use them in other dishes which already have meat in them.

1. Soak beans overnight in cold water. Drain, rinse and add to a 8-10 qt kettle. Add the turkey leg and all the other ingredients. Bring to a full boil, reduce heat to simmer and cover. Cook until tender, the time will vary depending on how old the beans are, but plan 2-3 hours.
