Ingredients

    1 cup mushrooms
    2 ore ida hashbrown brown
    1 tsp olive oil
    1/2 tsp garlic powder
    fat free cheddar cheese shredded
    2 cups extra lean cubed ham, diced
    8 eggs
    70 grams spinach

Directions

In non stick skillet add oil and heat add mushrooms and hashbrowns, cook till almost done, add chopped spinach and ham, cook til done. spread mixture evenly in thin layer on bottom of pan, sprinke seasoning on top Reduce heat to medium low, pour egg mixture into skillet. cover and cook 6 to 8 min or until eggs set but are still moist. Uncover and sprinkle with cheese, cover again and cook another 1 or 2 mintues until cheese melts. Cut into 4 equal servings.
